Ingredients

  • Onion
  • Zucchini
  • half Stuffing mix
  • half Cheddar cheese
  • Eggs
  • Milk
  • Water

  • remaining Stuffing mix
  • remaining Cheddar cheese
  • 3 tablespoons Butter

Instructions
 

  • Preheat your oven to 375°F and spray a two-quart baking dish with cooking spray.
  • Sauté the onion in butter over medium heat until it becomes translucent, about 5 minutes.
  • Add the zucchini to the pan and cook for an additional 4-5 minutes to help reduce its moisture content.
  • In a medium bowl, combine half of the stuffing mix, half of the cheddar cheese, eggs, milk, butter, and the zucchini-onion mixture. Gradually add water until the mixture is moist.
  • Spread this base mixture evenly into the prepared baking dish.
  • In a separate small bowl, mix together the remaining stuffing mix, the remaining cheddar cheese, and 3 tablespoons of butter to create the topping.
  • Sprinkle the prepared topping mixture evenly over the base in the baking dish.
  • Bake for approximately 25 minutes, or until the topping is golden brown and lightly browned.
