Ingredients
  

  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon butter
  • 1 cup long grain white rice
  • 1 cup chicken broth approximately
  • 1 cup tomato sauce approximately
  • 1 ½ teaspoons chili powder
  • 1 teaspoon cumin
  • ½ teaspoon garlic salt
  • ½ teaspoon dried oregano
  • ¼ cup diced fresh tomatoes seeded & drained (optional)

Instructions
 

  • Melt olive oil and butter in a saucepan, then toast the rice for 2-3 minutes.
  • Add broth, tomato sauce, and spices, bring to a boil, then simmer covered for 20 minutes.
  • Let the rice rest off heat, fluff with a fork, and serve warm.

Notes

Adjust liquid amounts based on your rice package instructions. Garnish with fresh cilantro or salsa if desired.
