Ingredients
  

  • 4 lbs fresh peaches approximately 10 large peaches
  • 1 /2 cup sugar
  • 1 /2 cup water omit if peaches are very juicy
  • 2 Tbsp fresh lemon juice

Instructions
 

  • Peel and roughly chop the peaches.
  • Place peaches, water, and sugar in a heavy pot. Heat on medium, stirring until sugar dissolves. Bring to a boil, then lower heat and simmer for 20 minutes until peaches are tender.
  • Stir in lemon juice. Puree the mixture in batches using a blender or food processor until completely smooth.
  • Strain the puree through a mesh strainer to remove seeds or lumps, pressing firmly with a spoon. (Skip straining if the puree is already smooth).
  • Return the puree to the pot and bring to a boil. Lower heat and cook gently for 25-30 minutes, stirring frequently, until the mixture is greatly reduced and thickened.
  • Test for doneness: Stirring should leave trails in the mixture, and a spoon test should show the butter does not fill in the groove.
  • Ladle hot butter into clean jars. Cool completely before capping.

- Use ripe summer peaches for best flavor; fresh or frozen fruit can be used.
- Sugar quantity may vary based on the natural sweetness of the fruit.
- Optional flavor additions include cinnamon, vanilla bean, or almond extract.
