Ingredients
  

  • 2.5 lb. boneless pork shoulder
  • 2 tablespoons brown sugar
  • 1 tablespoon Kosher salt
  • 1.5 teaspoons paprika
  • 1 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 8 oz. beer or chicken broth
  • 1 cup BBQ sauce
  • 1 tablespoon white wine vinegar

Instructions
 

  • Combine brown sugar, salt, pepper, cumin, chili powder, paprika, and garlic powder in a small bowl. Rub this spice mixture evenly over all sides of the pork shoulder.
  • Heat olive oil in the Instant Pot on sauté mode. Sear the pork on all sides until a dark golden-brown crust forms, about 2-3 minutes per side.
  • In a measuring cup, combine the beer or chicken broth, BBQ sauce, and white wine vinegar. Pour this mixture over the seared pork in the Instant Pot.
  • Secure the Instant Pot lid and cook on high pressure for 1 hour and 15 minutes. After cooking, allow the pressure to release naturally for 10 minutes before performing a quick release for any remaining steam.
  • Remove the pork from the Instant Pot and shred it using two forks, discarding any excess fat or gristle. Serve the shredded pork on toasted brioche buns, optionally topped with extra BBQ sauce and coleslaw.

Notes

Season the pork thoroughly to ensure an even coating of flavor. Searing the meat before pressure cooking is crucial for developing a rich, deep flavor and color.
