Ingredients
  

  • 1 cup filtered water
  • 0.5 cup melted butter
  • 1 cup all-purpose flour
  • 2 large eggs (room temperature)
  • 0.25 cup sugar (for coating)
  • 1 teaspoon vanilla extract
  • 1 quart vegetable oil (for frying)

Instructions
 

  • Bring water and melted butter to a boil in a pot, then remove from heat.
  • Stir in flour until a ball forms, then let it cool for 5 minutes.
  • Beat in eggs one at a time until smooth, then add vanilla extract.
  • Heat oil in a deep fryer, pipe the dough into hot oil, and fry until golden brown.
  • Remove churros and coat them in a mixture of sugar and cinnamon.

Notes

Store churros in an airtight container at room temperature for up to one day; reheat in a hot oven for 4–5 minutes to revive. For longer storage, freeze churros in a single layer on a tray, then transfer to a bag and reheat from frozen in the oven until crisp. Avoid overheating the oil to prevent burning; start at medium-high heat and adjust as necessary.
