Easy Elote Dip: A Flavorful, Family-Friendly Snack

Ingredients
  

  • 1 tablespoon butter or olive oil
  • 1 pound whole kernel corn (approximately 3.5 cups)
  • 2 cloves garlic minced
  • 1 whole jalapeño seeded and finely chopped
  • ¼ cup red onion finely chopped
  • ¼ cup cotija cheese or queso fresco crumbled
  • 3 tablespoons fresh cilantro finely chopped
  • 3 tablespoons Greek yogurt (or mayonnaise)
  • ½ teaspoon chili powder
  • 1 whole lime juice of
  • Kosher salt and freshly-cracked black pepper to taste

Instructions
 

  • Melt butter or olive oil in a large sauté pan over medium-high heat.
  • Add corn and cook for about 10 minutes, stirring occasionally, until golden and caramelized.
  • Stir in minced garlic and cook for an additional 2 minutes until fragrant.
  • Remove the pan from heat and transfer the corn mixture to a large mixing bowl.
  • Combine the corn mixture with jalapeño, onion, cheese, cilantro, Greek yogurt, chili powder, lime juice, salt, and pepper. Stir until well mixed.
  • Taste and adjust seasonings as needed.
  • Serve immediately or refrigerate for later use.

Notes

Corn can be fresh, frozen, or canned. Greek yogurt can be substituted with sour cream or mayonnaise. Red onion and jalapeño are optional; seed jalapeño to reduce heat. This dip does not freeze well and can be stored in the refrigerator for up to five days. Adjust seasoning amounts to your preference.
