Ingredients
  

  • 1 tablespoon olive oil
  • 6 boneless skinless chicken thighs or breasts (cut into bite-sized pieces)
  • 4 bell peppers (sliced) varied colors recommended
  • 1 small onion (sliced)
  • 1 package fajita seasoning mix taco seasoning may also be used
  • 1 cup sour cream
  • 4 ounces cream cheese (softened)
  • 2 cups cheddar cheese (grated)
  • Optional for serving: avocado, guacamole, sour cream, and salsa

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Heat olive oil in a skillet over medium heat and sauté the chicken until fully cooked, then set aside.
  • Sauté the sliced onions and bell peppers in the same skillet until tender.
  • Return the chicken to the skillet and mix in fajita seasoning, sour cream, and cream cheese.
  • Top with cheddar cheese and bake for 10 to 15 minutes until the cheese is melted.

Notes

To reduce fat, use boneless chicken breasts and lower-fat dairy options. For a dairy-free version, substitute with plant-based alternatives.
