Ingredients
  

  • 1 tablespoon unsalted butter for sauce
  • 2 pounds zucchini (approximately 4 medium), cut into 1/4-inch rounds
  • 1 shallot, finely diced
  • 2 cloves garlic, minced
  • 1 cup heavy whipping cream
  • 1 teaspoon salt
  • 1 /2 teaspoon pepper
  • 1 /2 cup Parmesan cheese
  • 1 cup Gruyere cheese, divided
  • 3 /4 cup blanched almond flour
  • 2 tablespoons unsalted butter, melted for topping

Instructions
 

  • Preheat oven to 400°F. Grease a large casserole dish with butter or cooking spray.
  • Arrange a layer of zucchini rounds in the bottom of the dish, overlapping slightly. Set aside the remaining zucchini.
  • In a large skillet over medium-high heat, melt 1 tablespoon of butter. Add shallot and garlic; cook 2-3 minutes, stirring frequently, until softened.
  • Pour in heavy cream and increase heat to high. Bring to a boil and cook for 1 minute until slightly thickened.
  • Remove from heat and stir in Parmesan cheese and 1/2 cup of the Gruyere cheese.
  • Pour half of the cheese sauce over the zucchini layer. Add the second layer of zucchini. Pour the remaining sauce over the top.
  • Combine almond flour and melted butter in a bowl until crumbs form. Sprinkle crumbs over the casserole and top with the remaining Gruyere cheese.
  • Bake uncovered for 20 minutes, or until the topping is light brown and the zucchini is fork-tender.
  • Serve hot.
