Ingredients
  

  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • 1 tsp baking soda
  • 1 tsp baking powder

Wet Ingredients

  • 1 cup sour cream
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 3 large peaches, peeled and chopped
  • 1 large peach, sliced for topping

Streusel Topping

  • ¼ cup all-purpose flour
  • 2 tbsp brown sugar
  • ½ tsp cinnamon
  • tsp salt
  • 2 tbsp butter

Instructions
 

  • Preheat your oven to 375ºF and prepare a 12-cup muffin pan by lining it with paper liners or greasing it.
  • In a small bowl, combine the streusel ingredients: flour, brown sugar, cinnamon, salt, and butter. Rub the butter into the dry ingredients until coarse crumbs form, then set aside.
  • In a large bowl, whisk together the dry muffin ingredients: flour, granulated sugar, baking soda, baking powder, and salt.
  • In a separate bowl, whisk the wet ingredients: sour cream, vegetable oil, eggs, and vanilla extract. Pour the wet mixture into the dry ingredients and fold gently until just combined, leaving some floury patches.
  • Gently fold in the chopped peaches into the batter.
  • Divide the batter evenly among the prepared muffin cups. Sprinkle the streusel topping over each muffin, and place a peach slice on top of each.
  • Bake for 20-22 minutes, or until the muffin tops spring back when lightly touched.
  • Allow the muffins to cool on a wire rack before serving.
