  • 1 Egg + 1 Egg White

  • 1 ¾ cup Flour
  • 2 tsp Baking Powder
  • 2 tsp Corn Starch
  • 1 ½ cups Cranberries
  • Sparkling Sugar for topping

Instructions
 

  • Preheat the oven to 425°F.
  • In a large bowl, mix the melted butter, oil, and sugar until well combined.
  • Add the eggs, egg white, vanilla extract, and buttermilk to the wet mixture; stir to combine.
  • In a separate bowl, whisk together the flour, baking powder, and cornstarch.
  • Pour the dry ingredients into the wet mixture and combine thoroughly.
  • Fold in the cranberries.
  • Line a muffin pan with 12 liners and distribute the batter evenly among them.
  • Press additional cranberries onto the tops of the batter and sprinkle generously with sparkling sugar.
  • Bake at 425°F for 8 minutes.
  • Without opening the oven door, reduce the temperature to 350°F and bake for an additional 12 minutes.
  • Remove from the oven and allow to cool completely.
