Ingredients
  

  • 3 tablespoons fresh lime juice
  • 2-3 teaspoons honey start with 2, add more if needed
  • 1 medium jalapeño finely chopped
  • 1 small clove garlic finely minced
  • ¼ teaspoon salt
  • ¾ cup diced jicama
  • ½ cup finely diced white onion
  • 1 cup diced fresh strawberries
  • 1 cup fresh blueberries
  • ½ cup fresh cilantro finely chopped, reserve 1 tablespoon for garnish

Instructions
 

  • Combine lime juice, honey, jalapeño, garlic, and salt in a small bowl; stir until well blended.
  • Finely chop the cilantro and reserve 1 tablespoon for garnish.
  • In a medium bowl, combine the jicama, onion, strawberries, blueberries, and remaining cilantro.
  • Pour the dressing over the mixture and stir gently to combine.
  • Sprinkle with the reserved cilantro and serve immediately.

Notes

Prepare the dressing and cut the fruit and vegetables in advance, but store them separately until just before serving to maintain freshness. This salsa is versatile and can be served with chips, spooned over grilled chicken or fish, or used as a side dish for potlucks and picnics. Jicama provides the white color and crunch; available in produce sections of larger grocery stores.
