  • Peach Filling:
  • 4 large ripe peaches, pitted and sliced
  • 2 Tbsp gluten-free all-purpose flour
  • 2 Tbsp fresh lemon juice
  • 1 /2 tsp lemon zest
  • 1 tsp pure vanilla extract
  • 1 /4 cup pure maple syrup
  • 1 /4 tsp ground cinnamon
  • Pinch ground nutmeg optional
  • Pinch sea salt
  • Crumble Topping:
  • 3 /4 cup gluten-free all-purpose flour
  • 1 /2 cup gluten-free rolled oats
  • 1 /4 cup pure maple syrup
  • 1 /4 tsp ground cinnamon
  • 1 /4 tsp sea salt
  • 1 /3 cup coconut oil, softened or melted

Instructions
 

  • Preheat oven to 350°F (175°C). Lightly oil an 8-inch or 9-inch square or round baking dish.
  • Combine all crumble topping ingredients in a mixing bowl and stir well. Refrigerate for 5 minutes.
  • In a separate large bowl, combine sliced peaches with all peach filling ingredients. Gently toss until combined.
  • Transfer the peach mixture to the prepared baking dish.
  • Spoon the chilled crumble topping evenly over the peach filling.
  • Bake on the center rack for 40 to 50 minutes, or until the topping is golden brown and crispy.
  • Allow the cobbler to cool for 15 minutes before serving.

Notes

- Substitutions: If not following a dairy-free diet, melted butter can replace the coconut oil.
- Sweetness Adjustment: If peaches are unripe, add a few tablespoons of granulated sweetener to the filling. For a sweeter topping, add 1 to 3 tablespoons of white or brown sugar to the crumble mixture.
- Variations: Can be made year-round using frozen or canned peaches. A grain-free or paleo version is available using almond flour for the topping.
