  • 2-3 very ripe bananas, mashed
  • ⅓ cup melted butter
  • 1 teaspoon baking soda
  • a pinch salt
  • ¾ cup sugar can reduce or substitute with honey
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

Instructions
 

  • Preheat the oven to 350°F and prepare a muffin tin by greasing or lining it.
  • Combine the mashed bananas with melted butter in a bowl until smooth.
  • Mix in the baking soda and salt thoroughly.
  • Add sugar, beaten egg, and vanilla extract, stirring until well combined.
  • Incorporate the flour gently, mixing just until combined.
  • Fill each muffin cup about two-thirds full and bake for 18-20 minutes.
  • Allow the muffins to cool in the pan before transferring to a wire rack.

Notes

For added flavor, consider folding in chocolate chips or chopped nuts before baking. The muffins freeze well; store them in a zip-top bag after cooling. Avoid overmixing the batter to ensure a light and fluffy texture.
