Ingredients
  

  • 1 large Onion
  • 3 cloves Garlic
  • 1 large Bell pepper (red)
  • 1 large Bell pepper (green)
  • 2 medium Sweet potatoes
  • 1 can Black beans
  • 1 can Kidney beans
  • 1 can Pinto beans
  • 1 can Canned tomatoes
  • 1 cup Red enchilada sauce
  • 2 tablespoons Chili powder
  • 1 teaspoon Cumin
  • 2 leaves Bay leaves
  • Water to cover beans

Instructions
 

  • Sauté onions, bell peppers, and sweet potatoes in a Dutch oven over medium heat for 4-5 minutes until softened.
  • Add garlic and cook for an additional 2 minutes.
  • Incorporate all remaining ingredients and add enough water to cover the beans.
  • Bring to a boil, then reduce heat and simmer for about 1 hour until sweet potatoes are tender.
  • Serve hot and allow customization with toppings like avocado and cilantro.

Notes

Vegan chili can be frozen for longer storage and is suitable for meal prep. A variety of beans is recommended, but black beans and pinto beans can be used alone or in combination. Plant-based alternatives for sour cream and cheese are available for a vegan option.
