Ingredients
  

  • 1 cup graham cracker crumbs
  • ½ cup unsalted butter, melted

Cheesecake Filling

  • 1 cup fresh strawberries, hulled and sliced

Instructions
 

  • Preheat your oven to 350°F (175°C) and prepare a 9x9 inch baking dish by lining it.
  • Combine graham cracker crumbs and melted butter until the mixture resembles wet sand. Press this mixture firmly into the bottom of the prepared baking dish.
  • Bake the crust for 8-10 minutes until golden brown, then allow it to cool completely.
  • In a large bowl, beat the softened cream cheese until smooth, about 2-3 minutes. Gradually add the powdered sugar and mix until the filling is fluffy.
  • Stir in the vanilla extract and gently fold in the sliced fresh strawberries.
  • Pour the cheesecake filling over the cooled crust and spread it evenly.
  • Refrigerate the cheesecake for at least 4 hours, or preferably overnight, until it is firmly set.
  • For the topping, mix the crushed freeze-dried strawberries with optional graham cracker crumbs. Sprinkle this topping evenly over the set cheesecake.
