Ingredients
  

  • 1 cup all-purpose flour
  • ½ cup whole wheat flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup whole milk
  • 1 cup crumbled Greek feta cheese
  • 6 tablespoons extra virgin Greek olive oil
  • cup frozen chopped spinach thawed, drained, and squeezed dry
  • 3 tablespoons chopped fresh dill
  • 1 large egg

Instructions
 

  • Preheat the oven to 350°F (175°C) and lightly grease a 12-cup muffin tin.
  • In a bowl, combine the all-purpose flour, whole wheat flour, baking powder, baking soda, and salt.
  • In a separate bowl, mix the milk, feta cheese, olive oil, spinach, dill, and egg until well blended.
  • Gradually add the flour mixture to the wet ingredients, stirring to create a batter.
  • Spoon approximately 2 tablespoons of batter into each muffin cup.
  • Bake for about 35 minutes, or until a toothpick inserted into the center comes out clean.
