Ingredients
  

  • 2 pounds russet potatoes
  • 1 tablespoon kosher salt
  • ¾ teaspoon kosher salt
  • 2 tablespoons apple cider vinegar
  • ½ cup mayonnaise
  • ¼ cup sweet pickle relish
  • 2 teaspoons yellow mustard
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ cup celery diced

Instructions
 

  • Boil the potatoes in salted water until tender. Drain and let them cool slightly before peeling and cubing.
  • In a large bowl, combine the mayonnaise, apple cider vinegar, sweet pickle relish, yellow mustard, black pepper, and garlic powder. Mix well to create the dressing.
  • Add the cubed potatoes and diced celery to the dressing. Gently toss to coat everything evenly.
  • Season with the remaining ¾ teaspoon of kosher salt. Stir gently and chill for at least 30 minutes before serving.

Notes

For best results, use a good quality mayonnaise and ensure potatoes are cooked until fork-tender but not mushy.
