  • 55 oz can Bush’s Baked Beans
  • 8 oz can pineapple tidbits, drained reserve juice
  • 1 cup brown sugar
  • 1 cup ketchup
  • ½ Tablespoon dry ground yellow mustard
  • Salt and black pepper to taste
  • Optional: 1 cup chopped brisket or smoked barbecue meat, 5 sliced hot dogs seared

Instructions
 

  • Cook bacon pieces in a skillet over medium heat until crispy. Remove bacon with a slotted spoon and drain on paper towels, leaving the fat in the pan.
  • Add diced onion, bell pepper, and jalapeno to the remaining bacon fat. Cook for 3-4 minutes until tender.
  • Transfer cooked vegetables to a disposable pan or cast iron skillet. Add canned beans, pineapple chunks, ketchup, brown sugar, and mustard.
  • Stir to combine all ingredients. If the mixture is too thick, add reserved pineapple juice to thin.
  • Arrange the cooked bacon squares on top of the bean mixture.
  • Smoke at 225°F to 250°F for 2.5 to 3 hours using indirect heat. Alternatively, bake at 350°F for 1 hour.
