Ingredients
  

  • 2 pounds cooked shrimp, peeled, deveined, and tails removed
  • ½ cup red onion, diced
  • 1 jalapeno, seeded and minced
  • 1 seedless cucumber, diced
  • 2 tomatoes, seeded and diced
  • ½ cup cilantro, finely chopped
  • ½ cup lime juice
  • ¼ cup lemon juice
  • cup orange juice
  • Salt and pepper to taste
  • 1 large avocado, peeled, seeded, and chopped

Instructions
 

  • Cut the cooked shrimp into 1/2 inch pieces.
  • Combine shrimp, red onion, jalapeno, cucumber, tomatoes, and cilantro in a large bowl.
  • Mix lime juice, lemon juice, and orange juice in a separate bowl, then pour over the shrimp mixture and season with salt and pepper.
  • Refrigerate for 15 minutes, then add avocado before serving.

Notes

Any size shrimp can be used, and the mixture can be marinated for up to 8 hours; add avocado just before serving.
