Ingredients
  

  • 1 cup creamy peanut butter recommended: Jif or Skippy
  • ½ cup softened butter
  • ½ cup white sugar
  • ½ cup brown sugar
  • 1 egg
  • 1 tablespoon vanilla extract
  • 1 ½ cups flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt

Instructions
 

  • Preheat the oven to 350°F (175°C) and optionally line two baking sheets with parchment paper.
  • In a large bowl, mix the peanut butter, softened butter, white sugar, and brown sugar until smooth.
  • Add the egg and vanilla extract, mixing until fully combined.
  • In a separate bowl, whisk together the flour, baking powder, and salt, then gradually add to the wet mixture.
  • Scoop the dough into 1-inch balls and optionally roll in granulated sugar before placing on the baking sheet.
  • Flatten each ball with a fork to create a criss-cross pattern.
  • Bake for 8-9 minutes, then cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Cookies can be stored in an airtight container at room temperature for a few days. For longer storage, freeze cookies in an airtight freezer bag for 1-2 months. Use creamy peanut butter for a softer texture.
