Ingredients
  

Bread

  • 2 cups all-purpose flour, sifted then measured
  • 2 teaspoons baking powder
  • ½ cup granulated sugar
  • ½ teaspoon salt
  • 2 large eggs
  • ½ cup oil
  • ½ cup buttermilk
  • 1 teaspoon almond extract or vanilla extract
  • 1 ½ cups peaches (fresh, frozen, or canned)
  • 1 tablespoon all-purpose flour for coating peaches

White Chocolate Ganache Glaze

  • 4 ounces white chocolate candy melts
  • ¼ cup heavy whipping cream or whole milk

Peach Powdered Sugar Glaze

  • ½ medium peach peeled and pureed
  • ½ teaspoon almond extract
  • 1 ½ cups powdered sugar, sifted then measured
  • 1-2 tablespoons cream or milk (optional) to reach desired consistency

Instructions
 

Preparation

  • Preheat your oven to 350°F and grease and flour a 9x5-inch loaf pan.
  • In a large bowl, combine the sifted flour, baking powder, sugar, and salt. In a separate bowl, whisk the eggs until light and fluffy, then whisk in the oil, buttermilk, and extract.

Mixing and Baking

  • Combine the wet ingredients with the dry ingredients. Gently fold in the peaches until just combined, being careful not to overmix.
  • Pour the batter into the prepared loaf pan and bake for 45 to 50 minutes. The bread is ready when a toothpick inserted into the center comes out clean or with dry crumbs.

Glazing

  • For the White Chocolate Ganache: Heat the cream until warm, then pour over the white chocolate melts and whisk until smooth. Pour this glaze over the warm bread immediately.
  • For the Peach Powdered Sugar Glaze: Whisk together the pureed peach, almond extract, and sifted powdered sugar. Add cream or milk, one tablespoon at a time, if needed to achieve the desired consistency. Apply this glaze after the bread has cooled for 5 to 10 minutes.

Notes

Do not overmix the batter to ensure a tender texture. Peaches can be fresh, frozen (thawed), or canned. If using fresh peaches in the glaze, store the bread in the refrigerator; otherwise, store on the countertop. Bread is best served warm but is also suitable at room temperature. Apply powdered sugar glaze after the bread has cooled slightly. Bread stays fresh for up to 5 days when stored in an airtight container.
