Ingredients
  

  • 2 cups Pasta (rotini, penne, or bowties)
  • 2 ears Fresh corn (grilled or roasted)
  • 1 cup Cotija cheese
  • ½ cup Mayonnaise
  • ½ cup Sour cream
  • 2 tablespoons Lime juice
  • 1 teaspoon Chili powder
  • 1 teaspoon Garlic powder
  • ¼ cup Fresh cilantro
  • ¼ cup Green onions
  • Salt
  • Pepper

Instructions
 

  • Cook the pasta until al dente, then drain and cool.
  • Grill or roast the corn until charred, then cut the kernels off.
  • Crumble the cotija cheese and chop the green onions and cilantro.
  • Combine mayonnaise, sour cream, lime juice, chili powder, garlic powder, salt, and pepper to make the dressing.
  • Mix the cooled pasta with corn, cotija cheese, green onions, and cilantro.
  • Pour the dressing over the pasta and stir gently.
  • Taste and adjust seasoning if necessary.
  • Garnish with additional cotija cheese and cilantro.
  • Chill for 10 minutes before serving.

Notes

Grilled frozen corn can be used if fresh corn is not available. Feta cheese can replace cotija cheese if needed. Diced avocado can be added for extra creaminess. Black beans can be included for additional protein and texture. Crumbled bacon can be added for a smoky flavor. Diced jalapeños or hot sauce can be used for extra heat.
