Ingredients
  

  • 2 teaspoons olive oil
  • 1 pound boneless skinless chicken breast, cut into 1-inch pieces
  • Salt and pepper to taste
  • 1 red bell pepper, diced
  • 15 oz pineapple chunks (juice and fruit separated)
  • cup chicken broth
  • ¼ cup soy sauce
  • 2 tablespoons light brown sugar
  • 1 clove garlic, minced
  • 1 teaspoon ginger, grated
  • ¼ teaspoon red pepper flakes optional
  • 1 tablespoon cornstarch
  • Sesame seeds for topping
  • Green onion for topping

Instructions
 

  • Combine pineapple juice, chicken broth, soy sauce, brown sugar, garlic, ginger, and optional red pepper flakes in a bowl.
  • Heat olive oil in a skillet over medium heat.
  • Season chicken with salt and pepper, add to skillet, and sear for about 8 minutes.
  • Add red bell pepper and cook for 2-3 minutes until softened.
  • Stir in pineapple chunks and cook for an additional 3-4 minutes.
  • Pour sauce mixture into the skillet, stir, and simmer for about 5 minutes.
  • Combine cornstarch with water to create a slurry, add to the pan, and cook until the sauce thickens.
  • Sprinkle with sesame seeds and chopped green onion before serving.

Notes

Boneless skinless chicken breasts are recommended, but thighs can also be used. Fresh pineapple can replace canned; use 1 cup diced fresh pineapple and regular juice. Adjust spice level by omitting red pepper flakes if preferred.
