Ingredients
  

  • 1 ½ cups plain Greek yogurt or Skyr, unflavored/unsweetened
  • 1 package sugar-free gelatin powder 0.3 oz/10g
  • ½ cup boiling water
  • ½ teaspoon vanilla extract optional

Instructions
 

  • Whisk gelatin powder into boiling water until fully dissolved.
  • Gradually whisk half of the yogurt into the gelatin mixture to prevent lumps.
  • Add the remaining yogurt and whisk until smooth and lump-free. Stir in vanilla extract if desired.
  • Divide the mixture evenly between two parfait glasses or bowls.
  • Cover the glasses with plastic wrap and refrigerate for 1-2 hours until completely set.
  • Serve chilled, topped with whipped cream, fresh fruit, or other desired toppings.

Notes

Use boiling water to properly dissolve the gelatin. Whisk yogurt gradually to ensure a smooth, lump-free mixture. Plain or vanilla Greek yogurt is recommended; avoid sweetened varieties.
