Instructions
 

  • Preheat the oven to 350°F. Line a muffin tin with 10 silicone baking cups or paper liners.
  • In a large bowl, combine all dry ingredients, ensuring any lumps are broken up. In a separate bowl, mix all wet ingredients.
  • Pour the wet mixture into the dry ingredients and stir until combined. The batter will be thick. Gently fold in the diced peaches.
  • Distribute the batter evenly among the muffin cups. Bake for 25-28 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the muffins to cool on a wire rack for at least 10 minutes before removing them from the liners.
