Ingredients
  

  • 1 cooking spray
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 bunch green onions, chopped
  • 8 large eggs
  • 2 ¾ ounces fully-cooked bacon pieces
  • ¼ cup whole milk
  • 1 pinch garlic powder to taste
  • 1 pinch onion powder to taste
  • salt to taste
  • ground black pepper to taste
  • ½ (8 ounce) package shredded mild Cheddar cheese

Instructions
 

  • Preheat the oven to 350°F (175°C) and grease a 12-cup muffin tin with cooking spray.
  • In a large bowl, combine the chopped bell peppers and green onions.
  • Add the eggs, bacon, milk, garlic powder, onion powder, salt, and pepper to the bowl.
  • Mix in the shredded Cheddar cheese and whisk until well combined.
  • Distribute the mixture evenly into the prepared muffin cups.
  • Bake for approximately 30 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow to cool slightly before serving.

Notes

Any type of shredded cheese can be used as a substitute. Fresh bacon can be cooked and chopped instead of using precooked bacon.
