Ingredients
  

  • 1 lb boneless skinless chicken thighs
  • ½ tablespoon soy sauce
  • ½ tablespoon avocado oil
  • 1 clove garlic (grated) or 1 tsp garlic paste or 1/2 tsp garlic powder
  • 2–3 tablespoons taco seasoning e.g., Siete brand
  • ½ avocado (for green sauce)
  • ½ cup mayonnaise (for green sauce)
  • 3 oz cotija cheese (for green sauce)
  • 1 big handful cilantro stems and leaves about 1/2 cup, for green sauce
  • 1 clove garlic (for green sauce)
  • Juice of 1–2 limes (about 2 tablespoons, for green sauce)
  • 2 tablespoons water more as needed, for green sauce
  • Tortillas for serving
  • Limes, cilantro, and onion for topping

Instructions
 

  • Trim excess fat from the chicken and combine with soy sauce, avocado oil, and grated garlic, then sprinkle with taco seasoning.
  • Cook the chicken in an air fryer at 400°F for 10-12 minutes until golden and cooked through.
  • Blend the green sauce ingredients in a food processor until smooth, adjusting thickness as needed.
  • Let the chicken rest, chop into bite-sized pieces, and squeeze lime juice over it.
  • Assemble tacos with green sauce, chicken, cilantro, and diced onion.

Notes

For oven cooking, bake chicken at 425°F for 20 minutes. Adjust cooking times based on your air fryer model. The green sauce can be made in advance and stored in the refrigerator.
