Ingredients
  

  • 1 ½ cups zucchini, shredded
  • ¼ cup green onion, sliced optional
  • 2 large eggs
  • ¾ cup sour cream
  • ¼ cup butter, melted and cooled
  • 1 ½ cups cheddar cheese, shredded
  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt

Instructions
 

  • Combine shredded zucchini, sliced green onions (if using), eggs, sour cream, and melted butter in a large bowl. Stir in the shredded cheddar cheese.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, folding until just combined.
  • Pour the batter into a greased 9x5 inch loaf pan. Bake in a preheated oven at 350°F (180°C) for 50-70 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for a few minutes. Run a knife around the edges to loosen, then carefully remove it from the pan to cool further before slicing and serving warm with butter.

Notes

Use medium-sized zucchini to minimize excess moisture. Optional herbs like chives, parsley, dill, rosemary, or thyme can be added. For a cheesy crust, sprinkle extra cheese on top before baking.
