Ingredients
  

  • 2 cups broccoli florets chopped into small bite-sized pieces
  • 1 cup cashews roughly chopped or whole
  • 1 apple diced into small cubes
  • 1 pear diced into small cubes
  • ½ cup dried cranberries
  • ¼ cup red onion finely diced
  • ¼ cup feta cheese crumbled (optional)
  • ¼ cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Chop the broccoli into small florets and dice the apple and pear into small cubes.
  • In a large bowl, combine the broccoli, cashews, apple, pear, cranberries, and red onion.
  • In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.
  • Pour the dressing over the salad and toss to coat; add feta cheese if desired.
  • Serve immediately or refrigerate for 30 minutes to enhance flavors.

Notes

Fresh broccoli is recommended for optimal crunch. Cashews can be toasted for enhanced flavor. Adjust the dressing for sweetness or tanginess as desired.
