Ingredients
  

  • cups all-purpose flour
  • ¾ cup granulated sugar
  • ¾ cup butter, chilled and cubed

FILLING

  • 2 large eggs
  • 1 cup granulated sugar
  • ½ cup sour cream
  • cup all-purpose flour
  • Pinch salt
  • 3 cups fresh blueberries

CRUMB TOPPING

  • Reserved crumb mixture from crust mixture

Instructions
 

  • Preheat your oven to 325°F and grease an 8x8 inch baking dish.
  • Combine flour, sugar, and chilled butter in a large bowl until crumbly. Set aside ¾ to 1 cup of this mixture for the topping. Press the remaining mixture evenly into the prepared baking dish to form the crust.
  • Bake the crust for 18 minutes until the edges are golden brown. Remove from the oven.
  • In a separate bowl, whisk together eggs, sugar, sour cream, flour, and salt. Gently stir in the fresh blueberries.
  • Pour the blueberry filling over the warm crust and evenly sprinkle the reserved crumb mixture on top.
  • Bake for 50-60 minutes until the topping is slightly browned. Allow the bars to cool completely before serving.
