Ingredients
  

Blueberry Filling

  • 2 cups frozen blueberries defrosted
  • 2 tsp corn starch
  • 1 tbsp lemon juice
  • ¼ cup sweetener Splenda or white granulated sugar/sweetener

Bottom Layer and Top Crumble

  • 1 ¼ cup flour
  • ½ cup sweetener Splenda or white granulated sugar/sweetener
  • ¼ tsp baking powder
  • ½ cup plain Greek yogurt
  • 1 large egg
  • 1 tbsp brown sugar
  • ½ cup quick oats

Instructions
 

  • Preheat oven to 375°F. Grease an 8x8 square baking dish and line with parchment paper, ensuring a 3-inch overhang.
  • In a medium bowl, combine sweetener, flour, and baking powder. Mix with a fork.
  • Add Greek yogurt and egg to the dry mixture; mix with a fork until crumbly.
  • Divide the crumbly mixture: press ¾ into the prepared baking dish to form an even bottom layer. Set the remaining ¼ aside.
  • In a separate bowl, mix defrosted blueberries, corn starch, lemon juice, and sugar. Pour evenly over the bottom layer.
  • Stir brown sugar and quick oats into the reserved crumbly mixture.
  • Crumble the oat mixture over the blueberry layer.
  • Bake for 45 minutes.
  • Cool completely in the refrigerator for 2-3 hours. Use the parchment paper overhang to lift the bars out and cut.
