Ingredients
  

  • 2 cups rolled oats not quick oats
  • 1 ¼ cups milk dairy or plant-based
  • 2 eggs
  • 2 tbsp melted butter or coconut oil, grapeseed oil, or other neutral oil
  • 1/3-1/2 cup brown or white sugar or maple syrup
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 2 tbsp ground flaxseed
  • ¼ tsp kosher salt
  • 1 tsp vanilla extract
  • ½ cup applesauce or Greek yogurt or 1 mashed banana
  • 1 ½ cups fresh or frozen blueberries

Instructions
 

  • Preheat the oven to 350°F and adjust the oven rack to the lower middle position.
  • Grease an 8 x 8 baking dish with 1 tsp of butter or oil.
  • Place the rolled oats in the center of the baking dish.
  • Sprinkle sugar, cinnamon, baking powder, flaxseed, and salt over the oats, then mix thoroughly.
  • In a separate bowl, beat the eggs and whisk in the milk, remaining oil or butter, and vanilla extract.
  • Add the applesauce (or yogurt or banana) to the liquid mixture and whisk until combined.
  • Pour the liquid mixture over the oats and stir to combine.
  • Gently fold in the blueberries.
  • Let the mixture sit for about 15 minutes, stirring once or twice.
  • Mix again before placing in the oven.
  • Bake for 35-45 minutes, depending on desired texture.
  • Allow to cool for 10 minutes before cutting into 9 squares.

Notes

This recipe can be reheated by baking at 350°F for 10 minutes, microwaving, or eating cold. Adjust sweetness according to preference; maple syrup can be used as an alternative sweetener. The texture varies based on baking time: softer at 35 minutes, firmer at 45 minutes.
