Ingredients
  

  • 2 cups rolled oats
  • ½ cup oat flour can be homemade by blending rolled oats
  • 1 teaspoon cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • cup chocolate chips plus extra for topping
  • 1 large egg
  • 1 cup pure pumpkin puree
  • ½ cup mashed ripe banana approx. 1 medium banana
  • ¼ cup pure maple syrup honey may be used as a substitute
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat oven to 350°F and line an 8x8-inch baking pan with parchment paper.
  • In a large bowl, combine rolled oats, oat flour, baking powder, pumpkin pie spice, cinnamon, and salt. Stir well.
  • In a separate bowl, whisk the egg, then add pumpkin puree, mashed banana, maple syrup, and vanilla extract. Stir until smooth.
  • Pour the wet mixture into the dry ingredients and mix until evenly incorporated. Gently fold in chocolate chips.
  • Spread the batter evenly into the prepared pan. Sprinkle additional chocolate chips over the surface if desired.
  • Bake for 20–25 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the bars to cool in the pan for at least 15 minutes.
  • Lift the baked bars out of the pan using the parchment paper and slice into 12–16 pieces.

Notes

Use overripe bananas for increased natural sweetness and moisture. Oat flour can be homemade by blending rolled oats. Honey may be used as a substitute for maple syrup. Pumpkin puree can be replaced with sweet potato puree or roasted butternut squash. The recipe contains no added oil, butter, or refined sugar.
