Ingredients
  

  • Dough: 1 cup whole milk, 4 tablespoons unsalted butter (very soft), 3 1/2 cups all-purpose flour (divided), 1 package rapid rise yeast (0.25 oz), 3 tablespoons granulated sugar, 3/4 teaspoon salt, 1 large egg (room temperature)
  • Filling: 1 cup light brown sugar, 1 tablespoon ground cinnamon, 3/4 teaspoon ground ginger, 1/4 teaspoon nutmeg, 1/4 teaspoon cloves, 1/2 cup butter (very soft)
  • Topping: 1/2 cup unsalted butter, 3/4 cup dark brown sugar (packed), 1/4 teaspoon ground cinnamon, 1/3 cup heavy cream, 1/4 teaspoon salt, 1 1/2 cups pecan halves, 1/2 cup pecans (roughly chopped), 2 teaspoons vanilla extract

Instructions
 

  • Grease a 9x13-inch baking dish with nonstick spray.
  • Heat milk to a boil in a saucepan, remove from heat, and stir in butter. Cool mixture to 115-120°F.
  • In a mixer bowl, combine 2 1/2 cups flour, yeast, sugar, and salt. Whisk in egg.
  • Pour in milk/butter mixture. Attach dough hook and mix on low. Gradually add remaining flour, scraping sides as needed.
  • Mix on medium speed for 5 minutes. Knead dough by hand 5-6 times on a floured surface to form a smooth ball.
  • Cover bowl and let dough rise for 60 minutes or until doubled in size.
  • Mix filling ingredients (brown sugar, spices, butter) until a thick paste forms.
  • Roll dough into a 16x9-inch rectangle. Spread filling over the center, leaving a 3-inch border on the top and sides.
  • Roll dough tightly into a jelly roll and pinch seams to seal.
  • Cut roll into 12 equal pieces using dental floss or a serrated knife. Place pieces cut side up in the pan.
  • Cover and let rise for 30 minutes. Preheat oven to 350°F.
  • Bake for 18-20 minutes until lightly browned. Cool slightly.

Notes

- Stand mixer is recommended but hand kneading is possible.
- Use unscented dental floss for clean cuts.
- Dough temperature must be between 115-120°F before adding to yeast mixture.
- Serve warm with topping.
- No corn syrup is used in the topping.
