Ingredients
  

  • 1 to 2 sheets frozen puff pastry, defrosted
  • 1 to 2 tablespoons honey dijon mustard with balsamic vinegar or plain dijon mustard
  • 2 to 3 cups freshly grated Gruyere cheese or any white cheese
  • 1 ½ pounds medium asparagus, trimmed
  • Fresh or frozen peas (defrosted)
  • Extra virgin olive oil
  • Salt and pepper
  • Fresh lemon zest (for garnish)
  • Balsamic glaze (for serving)
  • Fresh pea shoots (for garnish)

Instructions
 

  • Preheat the oven to 400°F (200°C) and roll out the defrosted puff pastry on a floured surface, placing it on a parchment-lined baking sheet.
  • Score the pastry edges and pierce the center, then bake for 12 to 15 minutes until golden.
  • Spread honey dijon mustard on the baked pastry, sprinkle with Gruyere cheese, and poke holes if it puffs too much.
  • Arrange trimmed asparagus in a single layer over the cheese, add peas, brush with olive oil, and season.
  • Bake for 20 to 25 minutes until asparagus is tender, then cool slightly and garnish with lemon zest and balsamic glaze.

Notes

For a variation, use plain dijon mustard with a splash of balsamic vinegar if honey dijon is unavailable. Fresh or frozen peas can be used. Additional toppings like lemon zest and balsamic glaze enhance flavor.
