Ingredients
  

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 medium onion, chopped
  • 2 sticks celery, chopped
  • 3-4 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • ½ teaspoon Italian seasoning
  • 2 pounds asparagus, trimmed and cut into 1-inch pieces
  • 1 medium Russet potato, peeled and diced
  • ½ tablespoon fresh lemon juice
  • ½ cup heavy cream
  • Salt and pepper to taste

Instructions
 

  • Heat olive oil and butter in a soup pot over medium heat, sautéing onion and celery until browned, about 7-10 minutes.
  • Add minced garlic and cook for an additional 30 seconds.
  • Pour in broth, add Italian seasoning, asparagus, and potatoes; bring to a boil, then simmer until potatoes are tender, about 15 minutes.
  • Blend the soup until smooth, stir in lemon juice and heavy cream, and season with salt and pepper before serving.

Notes

Trim off the dry, woody ends of the asparagus before use. The cream can be omitted; coconut milk can be used as a dairy-free alternative.
