Ingredients
  

  • 12 ounces penne pasta
  • 1 pound asparagus ends removed and cut into 2-inch pieces
  • ½ cup frozen peas
  • 2 tablespoons unsalted butter
  • 8 ounces heavy cream
  • 1 string zest of lemon
  • 2 tablespoons lemon juice
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon crushed red pepper
  • 1 cup reserved pasta water
  • shredded parmesan cheese for garnish

Instructions
 

  • Boil salted water and cook penne pasta for 2 minutes less than package instructions.
  • Add asparagus and peas, cooking for the remaining 2 minutes, then reserve 1 cup pasta water and drain.
  • In a skillet, melt butter and stir in cream, lemon juice, zest, and spices, simmering gently.
  • Combine sauce with pasta and vegetables, mixing thoroughly.
  • Gradually add reserved pasta water until desired consistency is achieved.
  • Serve immediately, garnished with parmesan and additional red pepper if desired.

Cook asparagus until tender-crisp to avoid mushiness. Use fresh lemon for the best flavor. Grate cheese fresh for optimal melting. Prepare ingredients in advance to save time.
