Ingredients
  

  • 2 pounds asparagus trimmed and cut into 2-inch pieces
  • ½ cup mayonnaise
  • 6 ounces sharp cheddar cheese grated
  • ½ onion diced
  • 2 tablespoons flour
  • 2 cloves garlic minced
  • 1 cup milk
  • Salt and pepper to taste
  • 15 Ritz crackers or similar, crushed

Instructions
 

  • Combine asparagus, mayonnaise, and cheese in a large bowl.
  • Sauté onion in oil until soft and browned, about 5 minutes.
  • Add garlic and flour to the skillet, stirring to create a roux.
  • Gradually stir in milk, allowing the sauce to thicken, then season.
  • Pour the sauce over the asparagus mixture, combine, and transfer to a baking dish.
  • Top with crushed crackers and bake at 375°F for 40-50 minutes.
  • Optionally broil for 1 minute to brown the topping.

Notes

Fresh asparagus is preferred, but canned or thawed frozen asparagus can also be used. This dish can be prepared in advance and stored in the refrigerator for up to 3 days before baking.
