Ingredients
  

  • 2 large eggs
  • 1 cup milk (dairy or non-dairy)
  • 1 cup unsweetened applesauce
  • 1 tablespoon honey
  • 2 teaspoons vanilla extract
  • 2 ½ cups rolled oats (250 grams)
  • 2 teaspoons cinnamon
  • ¼ teaspoon nutmeg
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 2 cups diced apples (235 grams, about 1 large apple)
  • ½ cup walnuts, roughly chopped (50 grams)
  • apple thinly sliced apple (about 60 grams)

Instructions
 

  • Preheat the oven to 350°F (175°C) and grease an 8x8 inch baking dish.
  • In a large bowl, mix the wet ingredients: eggs, milk, applesauce, honey, and vanilla extract.
  • Add the dry ingredients: rolled oats, cinnamon, nutmeg, baking powder, and salt, and stir until combined.
  • Fold in the diced apples and walnuts, reserving some walnuts for topping.
  • Pour the mixture into the baking dish, top with sliced apples and remaining walnuts, and optionally sprinkle with cinnamon.
  • Bake for 35-40 minutes until firm; cool for 5 minutes before slicing into 9 bars.

Notes

Store cooled bars in an airtight container in the fridge for up to a week. To freeze, place individual bars on a plate to freeze for 2 hours, then transfer to a bag and freeze for up to 3 months. Defrost in the refrigerator and reheat in the microwave if desired. Can be served plain or with Greek yogurt and nut butter.
