Ingredients
  

  • 2 cans black beans (do not drain)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • ¼ teaspoon onion powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • teaspoon cumin
  • Chopped parsley for garnish (optional)

Instructions
 

  • Combine black beans with liquid, olive oil, vinegar, garlic powder, oregano, onion powder, salt, black pepper, and cumin in a saucepan.
  • Cover and heat over medium until simmering.
  • Reduce heat to medium-low and cook for 15-20 minutes, stirring occasionally.
  • Adjust consistency by simmering uncovered if too watery, or adding water if too thick.
  • Serve over white rice and garnish with parsley if desired.

Notes

Adjust the consistency of the beans based on the brand and type of canned beans used. Simmer uncovered for a thicker consistency or add water for a thinner one.
