Ingredients
  

  • 2 bunches asparagus
  • 1 teaspoon coarse black pepper
  • 1 clove garlic optional
  • 1-2 tablespoons cooking oil such as grapeseed
  • Salt to taste
  • 1 lemon sliced into wedges

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Trim the tough ends of the asparagus and soak in ice water for 5-10 minutes.
  • Toast black pepper in a sauté pan, then add cooking oil and minced garlic.
  • Dry the asparagus, place on a baking sheet, and drizzle with the oil mixture.
  • Bake for 15-20 minutes, flipping halfway, until bright green and crispy.
  • Cool for 5 minutes, then sprinkle with salt and lemon juice before serving.

Notes

For best results, add salt just before serving to maintain crispiness. This dish is best enjoyed hot but can be stored in the refrigerator for 1-2 days. Reheat in the microwave in 15-second increments if needed.
