Ingredients
  

  • 2 bunches asparagus
  • 1 teaspoon coarse black pepper
  • 1 clove garlic optional
  • 1-2 tablespoons cooking oil such as grapeseed
  • Salt to taste
  • 1 lemon sliced into wedges

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Trim the asparagus and soak in ice water for 5-10 minutes.
  • Toast black pepper in a frying pan, then add cooking oil and minced garlic.
  • Dry asparagus, toss with the pepper mixture, and arrange on a baking sheet.
  • Bake for 15-20 minutes, flipping halfway, until bright green and crispy.
  • Cool for 5 minutes, then sprinkle with salt and lemon juice before serving.

Notes

Add salt just before serving to maintain crispiness. Best served hot but can be stored in the refrigerator for 1-2 days; reheat in 15-second increments in the microwave.
