Ingredients
  

  • 1 lb rotini pasta
  • 1 ½ cups light mayonnaise
  • 1 ½ tbsp beef bouillon paste or beef bouillon cubes dissolved in 2 tablespoons hot milk or buttermilk
  • ½ cup light sour cream
  • ¼ cup buttermilk more may be needed for thinning
  • 3 tbsp white wine vinegar or plain white vinegar or apple cider vinegar
  • ½ tsp kosher salt
  • 1 large red bell pepper diced
  • 1 large green bell pepper diced
  • ½ cup red onion chopped
  • 4 cups cherry tomatoes halved

Instructions
 

  • Boil salted water, add pasta, and cook until al dente; drain and rinse under cold water.
  • In a bowl, whisk together mayonnaise and beef bouillon until smooth, then add sour cream, buttermilk, vinegar, and salt.
  • Mix cooled pasta into the dressing until coated, adjusting with buttermilk as needed.
  • Fold in bell peppers, red onion, and cherry tomatoes; season and serve immediately or chill before serving.

Notes

Ensure pasta is cooked al dente to prevent mushiness. Customize with additional vegetables like black olives, artichoke hearts, or roasted peppers.
