Ingredients
  

  • 2 large chicken breasts cut into bite-sized pieces
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp paprika
  • ½ tsp dried thyme
  • Salt and pepper to taste
  • 1 cup long-grain brown rice rinsed
  • 2 cups low-sodium chicken broth
  • ½ cup unsweetened almond milk or any milk alternative
  • ¼ cup grated Parmesan cheese
  • ¼ cup plain Greek yogurt
  • ½ cup frozen peas
  • ¼ cup chopped fresh parsley for garnish

Instructions
 

  • Heat olive oil in a skillet over medium heat, add chicken, season, and cook until golden brown for about 7-8 minutes.
  • In the same skillet, reduce heat, add garlic, and sauté for 1 minute until fragrant.
  • Stir in rinsed rice, add chicken broth, bring to a boil, then cover and simmer for 20 minutes.
  • Once rice is tender, mix in almond milk, Parmesan, and Greek yogurt until creamy.
  • Return chicken and add peas, stir, and cook for an additional 5 minutes.
  • Garnish with parsley and serve warm.

Notes

Ensure chicken is seared just until golden to maintain tenderness. Rinsing rice helps achieve a fluffier texture. Use low-sodium broth to manage salt levels.
