  • 1 9-inch pie crust homemade or store-bought
  • 3 cups blueberries fresh or frozen, thawed and drained if frozen
  • 1 cup white sugar
  • cup all-purpose flour
  • teaspoon salt
  • 2 eggs beaten
  • cup sour cream
  • ¼ cup white sugar for streusel topping
  • ¼ cup brown sugar for streusel topping
  • ½ cup all-purpose flour for streusel topping
  • ¼ cup cold butter cubed, for streusel topping

  • 1 teaspoon lemon juice to brighten flavor

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Place the blueberries evenly into the prepared 9-inch pie crust.
  • In a medium bowl, whisk together 1 cup white sugar, 1/3 cup flour, and salt. Then, incorporate the beaten eggs and sour cream until the mixture is smooth.
  • Pour the prepared custard mixture over the blueberries in the pie crust.
  • Prepare the streusel topping: In a separate bowl, combine 1/4 cup white sugar, 1/4 cup brown sugar, and 1/2 cup flour. Cut in the cold butter using a pastry blender until the mixture forms coarse crumbs.
  • Evenly sprinkle the streusel topping over the custard and blueberry filling.
  • To prevent the crust from over-browning, cover the pie loosely with aluminum foil for the first 20 minutes of baking.
  • Bake for an additional 50 to 55 minutes, or until the topping is lightly browned and the filling is set.
  • Once baked, remove the pie from the oven and let it cool completely on a wire rack.
  • For the best texture and flavor, refrigerate the pie for at least 2 hours before serving.
