Ingredients
  

  • 40 oz frozen corn thawed or frozen
  • cup mayonnaise
  • cup sour cream
  • 2 teaspoons chili powder divided
  • ¾ teaspoon garlic powder
  • ½ teaspoon salt
  • 6 oz queso fresco crumbled and divided
  • 3 tablespoons chopped cilantro
  • Fresh limes optional

Instructions
 

  • Preheat your oven to 350°F and prepare a 9x13 inch baking dish by spraying it with nonstick cooking spray.
  • In a large bowl, combine the corn, mayonnaise, sour cream, 1 1/2 teaspoons of chili powder, garlic powder, salt, and 4 ounces of the crumbled queso fresco. Mix well.
  • Pour the corn mixture into the prepared baking dish and sprinkle the remaining chili powder evenly over the top.
  • Bake for 35-45 minutes, or until the casserole is heated through and bubbly around the edges.
  • Remove the casserole from the oven and top with the remaining queso fresco and chopped cilantro. Serve warm.

Notes

Corn can be used frozen, thawed, or fresh cut from the cob. If using frozen corn, baking time may extend to 40-45 minutes. Queso fresco is preferred for flavor, but cotija cheese is a suitable substitute. For added flavor, squeeze fresh lime juice over the casserole after baking. The dish is best served warm.
