Notes

The coleslaw can be prepared up to one day in advance; flavors improve after refrigeration. For homemade coleslaw mix, shred 1 medium head of green cabbage and 1 large carrot, or mix green and red cabbage to yield approximately 8 cups. Using lower-fat alternatives for mayonnaise or sour cream may alter the texture and taste of the dressing. Do not freeze the coleslaw. If the coleslaw has been sitting at room temperature for an extended period, it should be eaten immediately or discarded.
