Ingredients
  

  • 18 pieces corn tortillas yellow or white
  • 1 pound ground beef thawed
  • ¼ cup water
  • 1 cup shredded quesadilla cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt divided
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ cup vegetable oil
  • ¼ cup crumbled queso fresco for serving
  • Fresh cilantro for serving

Instructions
 

  • Preheat the oven to 425°F and line a baking sheet with parchment paper.
  • Brown the ground beef in a skillet over medium heat.
  • Add water and seasonings to the beef, heating for an additional minute.
  • Cut each tortilla into smaller circles using a biscuit or cookie cutter.
  • Brush the top of each tortilla circle with vegetable oil and place them oil-side down on the baking sheet.
  • Fill each tortilla circle with a tablespoon of the meat mixture and a heaping teaspoon of cheese.
  • Bake for 1 minute until the cheese begins to melt.
  • Fold each tortilla in half and press down flat, sprinkling the remaining salt on top.
  • Bake for 10 minutes until golden brown, flipping halfway through.
  • Optionally, top with crumbled queso fresco and fresh cilantro before serving.

Notes

This recipe can be easily doubled for larger gatherings. Various cheeses can be used, and tacos can be topped with queso fresco and cilantro. They can be frozen for up to 3-4 months and reheated in the oven.
