Ingredients
  

  • 1 cup plain Greek yogurt full-fat recommended
  • ½ cup fresh cilantro tightly packed
  • ¼ cup freshly-squeezed lime juice
  • ½ teaspoon ground cumin
  • ½ teaspoon fine sea salt
  • ¼ teaspoon freshly-cracked black pepper
  • 3 green onions green parts only
  • 2 garlic cloves
  • 1 jalapeño or serrano pepper optional, stemmed and cored
  • 1 bag coleslaw mix 14-ounce bag (about 7-8 cups)
  • honey optional for sweetness
  • chipotle optional for smokiness
  • avocado optional
  • extra vegetables optional
  • nuts optional for crunch

Instructions
 

  • Blend Greek yogurt, cilantro, lime juice, cumin, salt, black pepper, green onions, garlic, and jalapeño (if using) until well combined.
  • In a large bowl, add coleslaw mix and drizzle the dressing over it, tossing until evenly coated.
  • Serve immediately or refrigerate for up to 24 hours.

Notes

Greek yogurt can be substituted with mayonnaise or a mix of both for a different flavor. To make homemade coleslaw mix, combine approximately 7 cups of shredded cabbage and 1 cup of shredded carrots. The dressing can also be made by hand by finely chopping the ingredients and whisking them together.
