Ingredients
  

  • cup granulated sugar
  • 1 tbsp ground cinnamon
  • ¼ tsp salt
  • 1 cup water
  • ½ cup butter
  • ¼ cup brown sugar
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 tsp vanilla extract optional

Instructions
 

  • In a saucepan, combine water, butter, brown sugar, and salt over medium heat and bring to a simmer.
  • Add flour all at once, stirring until a soft dough forms, then cook for an additional minute.
  • Transfer dough to a bowl, let cool for 10 minutes, and stir in vanilla extract.
  • Incorporate eggs one at a time, mixing until a smooth dough forms.
  • Preheat oven to 425°F and line baking sheets with parchment paper.
  • Pipe 3 to 4-inch ropes of dough onto the sheets, leaving space between each.
  • Lightly spray tops with oil, mist the pan with water, and bake for 20 to 25 minutes until golden.
  • Turn off the oven, open the door briefly, then let churros rest in the warm oven for 10 minutes.
  • Brush with melted butter and toss in cinnamon sugar to coat before serving.

Notes

Best enjoyed fresh and warm. Store leftovers in an airtight container for up to 2 days. Dough can be prepared in advance and refrigerated.
